Theobroma cacao L.

Two expressions of the same lineage

Criollo is the original cacao, the one the Maya and the Mexica grew long before cacao became a traded commodity. It yields little, it resists disease poorly, it demands labour. That is precisely what makes it impossible to replace on the palate: almost no bitterness, low acidity, and an aromatic range bulk cacao never reaches.

White Criollo

The ivory heart

Beans whose cotyledon stays white to ivory, nearly free of anthocyanins. That is the signature of a soft, milky cacao with no astringency, which makers roast lightly so that none of its delicacy is lost.

  • Bean colourWhite to ivory
  • BitternessVery low
  • AromasHazelnut, milk, dried fruit
  • RoastLight, 110 to 120 °C

Criollo

The depth

Beans with more colour, pale purple to light brown, for a cacao with more structure. Acidity stays low but the aromatic weave opens up: white flowers, red fruit, soft spices, and a length on the palate that carries a tasting bar.

  • Bean colourPale purple to brown
  • BitternessLow
  • AromasFloral, red fruit, spice

Craft

Nothing is decided at the plant. Everything is decided before.

A great cacao is lost in fermentation and ruined in drying. These are the steps we control, lot by lot, before the bean reaches your workshop.

Harvest

Pods cut at maturity, with a blade, without wounding the flower cushion that will carry the next crop.

At maturity

Pod breaking

The fruit is opened within 24 hours and the beans are drawn out with their pulp, by hand.

Within 24 h

Fermentation

In wooden boxes, with turning. Criollo ferments fast: go further and it loses the softness and takes on the bitterness we spare it.

2 to 4 days

Drying

Slow drying on beds or under cover, turned by hand, until moisture settles around 7 %.

7 to 14 days

Sorting and grading

Flat, germinated and mouldy beans removed. Declared bean count and a 300 bean cut test for every lot.

300 beans tested

Roasting

A curve matched to the variety and to your use. Criollo roasts low: finesse comes before colour.

110 to 130 °C

Cracking

Shell and nib separated by winnowing. This gives the nibs, the base of everything that follows.

Nibs

Grinding and pressing

Nibs ground into cocoa mass, then pressed to separate butter from the cake, which is milled into powder.

Quality and traceability

What comes with every lot

A fine cacao without documentation is only a promise. Every shipment leaves with what it takes to verify it.

Traced to the plot

Origin, grower, harvest date and geographic coordinates of the lot, in line with what the European deforestation regulation expects.

Documented cut test

300 beans cut per lot: share of well fermented, slaty, purple, mouldy or germinated beans.

Bean count and moisture

Beans per 100 g declared before shipping, moisture held around 7 %, waste ratio stated.

Analyses on request

Heavy metals including cadmium, microbiology, pesticides, under regulation (EU) 2023/915 and your own specifications.

Spec sheet and shelf life

Technical data sheet, safety sheet, allergens, storage conditions and shelf life supplied for every reference.

Sample before order

No blind ordering. You receive, you roast, you taste, then you decide.

Frequent questions

Before you write

Can we get a sample before ordering?
Yes, and we recommend it. We send 200 g to 1 kg depending on the product, taken from the lot actually available, with its spec sheet. Fine cacao is judged by roasting and tasting, not from a photograph.
What quantities can you supply?
From a few kilos for a workshop starting out to several tonnes a year under contract. White Criollo remains a limited crop: for steady volumes we work by reservation on the coming harvest.
What is the difference between White Criollo and Criollo?
The White has a white to ivory cotyledon, almost no bitterness, with milky and hazelnut notes. Criollo has more colour and a little more structure, with a floral and red fruit register. The first lifts milk chocolate and ganaches, the second carries origin bars.
Do you ship internationally?
Yes. Samples by express courier worldwide, lots by air or sea freight, on EXW, FOB, CIF or DDP terms. We prepare the accompanying documents and check the destination country requirements before shipping.
What documents come with a shipment?
Commercial invoice, packing list, certificate of origin, phytosanitary certificate where required, analysis reports and the lot spec sheet. Further analyses, cadmium in particular, are supplied on request.
Do you really supply cacao pulp?
Yes. It is the white mucilage around the bean, collected before fermentation, pasteurised then frozen. It is used in sorbet, cocktails, juice or reductions. It travels frozen at -18 °C, in 1 kg or 10 kg packs.
